In this hands on class you will learn the history, safety and health benefits of the Art of Fermentation.  We will spend the day exploring how bacterium can help our systems and why this wonderful tradition was created.  After lunch we will make a Crock Batch of Sauerkraut, Kimchi, and if supplies allow we will explore a very rare Serbian traditional ferment Turjija, one that is perfect for the mountain climate of Wyoming.  You will take your own Sauerkraut and Kimchi home with you to continue the fermentation process in your own kitchen and then be able to enjoy the wonderful benefits of flavor and health these foods provide.


Heather Olson – Herbalist 

Heather has been studying Western Herbalism and Natural Health for 12 years. She lives in the Mountains of Wyoming where she crates her own herbal remedies from wild harvested and locally sourced, organic ingredients. Health and wellness, by nature is not only her passion, but her life. Spring, summer and Fall are spent in the forest working with the plants, and working in her gardens to grow pure food that lasts through the winter with homestead techniques she has learned and mastered over the years. She lives with the philosophy of Hippocrates…. Let they food be thy medicine and they medicine thy food…. Heather is mostly self-taught, but also holds a certificate as a Clinical Herbalist from Vital Ways Holistic Herb School in Portland Oregon, and Rosemary Gladstar of Sage Mountain in Vermont.
